Hummus.                 

Keeping with light cooking this month we would like to introduce you to our version of a quick and easy Hummus recipe.  Hummus is a chick pea based spread or dip for flat bread.  It incorporates as one of its ingredients a small amount of Tahini, which is a sesame seed paste.  At therecipeexchange we have substituted Peanut butter for the Tahini and have made some adjustments with the other ingredients to come up with a delicious result.  We believe that a lot of our readers probably have peanut butter already in their pantries.  Instead of having to buy this one ingredient we have made cooking a little simpler for you.  Try our delicious version of Hummus and let us know what you think.  Spread it on top of some dark pumpernickel bread or on your favorite crackers. Try some spread on top of some sliced fresh vegetables also. It is delicious dip.         

Ingredients: 
Chick Peas-1 20 oz. can drained. 
Garlic-1 clove, peeled. 
Olive Oil-4 tablespoons. 
Lemon Juice-3 tablespoons fresh lemon juice. 
Coarse Salt-1 1/2 tablespoons. 
Fresh Ground Pepper-1/2 teaspoon. 
Peanut butter-1 tablespoon. 
Sesame Seed Oil- 1/2 teaspoon. 
Cumin-a dash.         

Instructions-
Place all the ingredients into a food processor.  Process until the mixture is smooth.  Place in a bowl and refrigerate 24 hours before serving.
